2 free-range eggs
1 zucchini grated
2 spring onions finely sliced
2 heaped tablespoons finely chopped parsley
2 heaped tablespoons finely chopped chives
Freshly ground black pepper
Sea salt to taste
(GF, DF, NF, YF)
Combine all the ingredients, mix well and pour into omelette pan brushed with olive oil.
Cook until mixture is firm, then turn omelette over and cook the other side.
Serve with one of our salads.
